It’s our last Friday of school! My girls are officially finished as of today! I still have next week with students through Wednesday and two teacher workdays Thursday and Friday.  After that, BRING ON THE SUMMER! 

It has been such a crazy year and I know I’m definitely ready to relax and enjoy some downtime!

Today I will be sharing some recent favorites!

FAVORITE #1: Our 5th grade graduate!!  It was touch and go there for a while and we weren’t sure if she’d make it through, but she did it! I now have two middle schoolers! Yikes!

FAVORITE #2: Dance! This weekend we have recitals – 2 of them! Rylie is taking two classes this year – Tahitian and Jazz. Her Tahitian recital is Saturday at 2 and then she and Shelby have another recital at 7:00. Shelby is taking Hip Hop.

FAVORITE #3: I know I’m really late to the party, but I have not watched Bridgerton yet. I like to read the books before I watch the movie or show.  Since this year has been so crazy, I have not made a lot of time for television. I bought all the books on Amazon when I caught them on sale (and most of them are still under $5!) so now I’m working my way through each book.  I’m on book 5 now and I’m enjoying them!  Fun fact: at one time I wanted to write Regency Romance novels, so these are right up my alley!!

FAVORITE #4: Easy dinners!!  The end of the school year is crazy and exhausting! I love that I have a few easy-to-throw-together recipes that I can fall back on when I’m tired and really want to do as little as possible!  This is pesto chicken and the original recipe is here.

I tweaked the recipe, of course, and I use a block of cream cheese, 6 oz of pesto and mozarella cheese (which I almost forgot so I didn’t include it in the picture!!)

I take 2 or 3 large chicken breasts and cut them in half to make them thinner. I soften the cream cheese and mix it with the pesto and cover the chicken. Then, top each breast with mozzarella cheese.  Bake at 375 degrees for about 25-30 minutes.  I usually serve this with roasted broccoli or a salad.

It is so delicious!  If you are a fan of pesto, I think you will really enjoy this easy Pesto Chicken!

 

I hope you all had a great week, too! I’ll be gearing up for the last 3 days with my first graders and then finally begin our summer vacation! I’m ready!
