Easy Weeknight Meal

I love finding and trying recipes for easy meals – especially to use on a busy weeknight! This recipe from Budget Bytes was my inspiration. I, of course, made my own tweaks, but it turned out delicious! This is super easy weeknight meal!

 

These were the ingredients I used. Now, there really wasn’t that much spinach left in the bag. I had used most of it for another recipe. There was only about a third of the bag but it was plenty for us.

 

First, I sauteed onions (not in the original recipe but we love them!) in about 2 tablespoons of butter. I LOVE the smell of sauteeing onions! When they were soft, I added 1/2 a teaspoon of garlic, the mushrooms and the spinach. This was another tweak on my part! The original recipe just said to drain and squeeze the spinach and then lay it on the bottom of the dish. I cooked the spinach just a little to get rid of the water.

I added all that to a pie pan. (I had a picture of all the yummy sauteed goodness but I accidently deleted the picture. #Bloggernewbiefail I added the feta on top of the onion/mushroom/spinach mixture. The original recipe called for 2 oz feta. I added at minimum of 4 oz – we love our feta!!

Then I used 5 eggs and about half a cup of heavy whipping cream and half a cup of parmesan cheese. I mixed it all together and added that to the pie pan. Again, blogger fail – I deleted that picture too!! (insert sad face)

I also added a good handful (and then some) of mozzarella cheese. I don’t always measure cheese – more is better in our house! I popped it into the oven at 350 degrees for about 50 minutes and out came the deliciousness below!

 

I almost had another blogger newbie fail and started serving before getting a picture! In my defense, I was hungry and it looked amazing!

It’s a super easy recipe if you are looking for easy weeknight meals. It’s not a “quick” meal but it comes together easily and the taste is definitely worth it!
